We like to use as much of the coconut as possible, so that nothing is wasted. We use the water in our cooking, cocktails and for refreshing drinks, the meat is then used to make coconut milks and coconut flour which have a variety of uses across all types of foods.

Coconut flour is a gluten-free, healthier alternative to other flours. It is high in fibre, protein and healthy fats, plus it is low in sugar, digestible carbohydrates and calories making it a perfect choice for products and menus that are dedicated to gut health and digestive wellbeing.

Coconut flour is popular with paleo dieters, gluten-free eaters and those who suffer with Celiac Disease or digestive problems. It is a favourite ingredient with vegans, vegetarians, anyone with a nut allergy and those with diabetes... and just about everyone else in between. Coconut Flour comes from the white meat inside the mature coconut shell, harvested once the coconut husk falls from the palm. Although we call it a 'flour' it does not have any wheat, grains or nuts and is purely finely ground dried coconut meat.

Nutrition Benefits

There are a number of reasons to love the humble coconut and the health benefits that come with using coconut flour as an alternative to grain flours. Coconut flour is high in nutrients, low in calories and can be a very versatile flour. It is very uncommon for coconut flour to cause digestive issues unlike grain/wheat flours. The health benefits of using coconut flour in our recipes are far reaching and rather impressive:

Aids Metabolism 

Coconut flour has high levels of health saturated fats (which is a good thing!), they are in the form of 'medium chain fatty acids (MCFA) - These are easily used by your body for energy and help balance sugar levels as well as support metabolism.

High in Fibre

Coconut meat offers 61% dietary fibre -  And because fibre essentially cannot be absorbed by the body, some of the calories and carbohydrates found in coconut flour aren’t even absorbed and used, but rather they move right through the digestive tract helping to take toxins and waste along with them. Impressive.

Promotes Digestive & Heart Health

Studies have shown that coconut flour has the ability to lower 'bad' LDL cholesterol levels in people who have raised cholesterol levels. Coconut flour helps with healthy digestion and has a nutrient density. It has a positive effect on heart and digestion due to the high supply of both soluble and insoluble dietary fibre plus a healthy MUFA fat content.

You will need:

  • 80g Fine Coconut Flour
  • 120g Tapioca
  • 4g Xanthin Gum
  • 4g Salt
  • Water

Mix all the dry ingredients together.

Once you've made sure everything is blended well, you can start to add some water.

Start with a thick paste. Keep adding water until your dough starts to form a consistency where you can make a ball. Get your hands in and feel the texture. It takes approx 5 minutes to get to this stage.

Once you have your dough ball, separate in to smaller dough balls, approximately 20g each.

Using a rolling pin, or for best results - a tortilla press, flatten your dough ball in to a tortilla.

TIP: Use plastic sheeting to stop the dough sticking.

Place on a grill plate or directly on to a pan. Cook both sides until golden. It will need a few minutes each side.
